RE: ANCHOR RODS: Stainless Steel?

Galling is a major issue with stainless.  Use a graphite lubricant in an alcohol vehicle.  Neolube from Huron Industries is a good one. 
Specify ASTM A 276 or A 479 in your standard AISI types (303, 304, 316, 410, 416, etc.).  Or ASTM A 193, B8 or other high NI steel in the A 193 family.  Use the alloy that you need for the corrosive element of concern and the strength that you need.  The more popular type SS is 316.  It is pretty good.  Use ASTM A 194 for the nuts.  You can also reference the F594 or ASTM F 836 for the nuts. 
You will find a lot of 18.8 stainless fasteners.  I tend to avoid them unless your corrosive agent is fresh water in which case galvanized is a better choice.  SS in 18.8 will pit even in salt water.  It is not very effective. 
If you want to go wild and resist sulphuric acid, you will need to go to a Carpenter 20 stainless.  That will cost you a chunk and a half.  The nuts would be custom.
